My favorite meal
Picking one favorite meal that I've tasted is difficult, even the "unpopular" one prepared in an specific way can be very tasteful. My big trouble is picking between chilean food and paraguayan food (my stepdad is from Paraguay), obviosly I would tender for chilean food, but parguayan food is not "popular", and many people doesn't even taste that food. Paraguayan food is typically for have many cheese (cattle country), and many of the meal names are in guaraní, the second oficial language of that conutry. In this occasion I will talk about the Vorí Vorí (Bori bori in guaraní) a typical dish from there and is very delicious.
Vorí vorí you can define it like a cornmeal and cheese balls, that can be with a chicken soup (more traditional) or with other kind of soup. To prepare this meal is quite easy and very cheap, you need to start first with the soup, this part of the meal take time, so for the ingredients you need:
Soup
- 16 cups of water
- 1 whole chicken
- 1 chopped red pepper
- 1 chopped tomato
- 1 finely chopped onion
- Parsley and salt
First you cook the whole chicken in the water for 10-15 min, and then incorporate the rest of the ingredients and cook them for 30-35 min (boiling).
For the balls
- Need part of the chicken soup before adding the rest of ingredients
- 100 grs of Paraguay cheese (the tipically cheese that it sell in the country, is pure curd without salt, milk used is with all the fat, can be replaced with fresh cheese)
- 250 grs of cornmeal
Mix the cornmeal with the chicken soup (beware is hot) and then incorporate the cheese and make a mass. Then make little balls and incorporate thems to the soup at 20-25 min before the previous coocking ends (remember the time of boiling of the previous soup is 30-35 min, adds the balls 10 min before the coctions ends).
For vegetarian version, replace chicken for chilean pumpkin and for veggie version use vegan cheese for the balls and use the same replacement for vegetarians in soup. Also you can add whatever ingredients for soup as well (to the person's liking), and remember most of paraguayan food is gluten free.

I do not know anything of Paraguay meal. Probably I will try this recipe.
ResponderEliminarYou can search for Chipá (is like a bread, that use mandioc starch or cornstarch, that have melted cheese inside) or Chipa guazú (is like a corn and cheese cake that you can accompany with pasta or rice) or Mbeyú (is like a pancake of mandioc starch and with melted cheese inside). Is one of my favorites
EliminarIt's great you talking about meal little known as the Paraguayan. I would like to tried, but I don't have cornmeal, I can replace with cornstarch? and another thing In the moment you replace chicken for chilean pumpkin I would have to cook it in the same way?
ResponderEliminarNo, you can replace it with polenta, and yes, is like making a soup, instead of chicken, chilean pumpink as like the photo (is for give it some flavor, is the same procedure
